**Side note: I just have to say how proud I am of our husbands. Scott and James dismounted the whole thing late last week. Then on Sunday was able to get new hardware and get a majority of the set built with no instructions. It is going to be so fun for the kids once it is built and we buy new swings for it. They should feel so proud that they are able to provide that kind of happiness for there kids. We certainly did pick keepers Kelly :)
As the boys were building, Kelly was inside cooking the most amazing Italian dish I have had in a long time. Thank You Pinterest. She made lasagna roll ups. I will include the recipe at the end of my post :) Even Scott was telling me to make that again and he rarely does that. One thing about our Fundays is it usually always involves good food :) Kelly and I try to help out whenever we can. She had dinner duty this time and I had clean-up and dessert duty. I had been wanting to try a Smores Dip recipe I had found (Pinterest has done it again) and it turned out really good and was so simple. I will include that recipe as well.
The most fun thing about this day though, was just watching the kids play and interact with one another. They were literally outside the whole time we were there. It just melted my heart seeing the pure joy they had playing together. They were chasing each other, chasing the bunny, playing on the stairs on the new swing set, playing cars, you name it they did it. They just genuinely love being together (most of the time).
Although we did not do much, we did alot and had so much fun doing it! We never have moments of silence and the kids keep us on our feet but I don't think any of us would want it any other way :)
So thankful for the family our Heavenly Father blessed me with. They make me the person I am, and at the same time make me better :)
Now for every ones favorite part PICTURES:
Recipe for Lasagna Roll Ups:
1 (16 ounce) package uncooked lasagna noodles
Directions:
Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 5 to 8 minutes, or until just slightly underdone; drain and rinse.
In a large mixing bowl, mix together grated cheese, ricotta cheese, and 1 cup Parmesan cheese.
Lay out a noodle. Spread a layer of the cheese mixture on the noodle, then add a thin layer of sauce. Roll the noodle up, and place seam side down in a 13x9 pan. Repeat for other noodles. Top with remaining sauce and Parmesan cheese.
Bake in a preheated 350 degree F (175 degree C) oven for 30 min, or until hot and bubbly.
***I believe my sister added cooked ground beef to the sauce as well. Another healthy option would be to use ground turkey***
Recipe for S'more Dip
Ingredients
1 bag of semi sweet chocolate chips
1bag of large or jumbo marshmallows
1 box a graham crackers
Directions:
Preheat oven to 450 degrees.
Using the bag of chocolate chips create a thin layer on bottom of baking dish (I used a square cake pan), alot of recipes I saw online use a cast iron skillet.
Then layer marshmallows on top of chocolate chips.
Place in oven for approximately 5-7 minutes (until chocolate is melted and marshmallows are brown)
Use graham crackers to dip :) ***Note dip is very HOT***
